Other than that, I try to schedule professional cleaning according to the recommended timeline, and for our busy kitchen that's every three months to clean the exhaust system from grease and grime.
I think it's like getting your car serviced. You get documentation for that too, but it doesn't mean your car is guaranteed to stay safe forever. It just confirms that everything was in good condition at the time of the inspection. It's the same here. The cleaning company isn't telling you your exhaust system will stay perfectly clean forever. They're confirming that, right now, everything has been cleaned according to the required standards.
It also plays a big role for insurance companies. Why is it so important to clean the exhaust system? Because grease builds up inside, especially if the restaurant kitchen is used heavily.
