I’m putting together a meat platter with cured salami and ready-to-eat sausages for some guests. Could you please advise on serving, such as how many hours before serving should I take the slices out of the refrigerator to allow the full flavor to develop, and how should I properly store the remaining portion of the loaf to prevent the slices from drying out?

It is best to take the sliced ​​meat out about 20 minutes before serving so it can reach room temperature; the fat will soften slightly, and the flavor will be completely different. However, it is better to wrap the remaining log in parchment paper, as salami quickly loses its quality when wrapped in plastic film.
